The coffee beans are sorted and steamed for 30 minutes at low pressure, which prepares the coffee for decaffeination by opening its pores. After this, the coffee is placed in a solution of water and ethyl acetate. EA is a naturally occurring compound and solvent, obtained as a byproduct of fermentation. The solution binds to the salts of chlorogenic acids naturally present in the coffee. The tank is drained and refilled over eight hours until no caffeine is detected.
