The coffee beans are sorted and steamed for 30 minutes at low pressure, which prepares the coffee for decaffeination by opening its pores. The coffee is then placed in a solution of water and ethyl acetate. EA is a naturally occurring compound and solvent, obtained as a byproduct of fermentation. The solution binds to the chlorogenic acid salts naturally present in the coffee. The tank is drained and refilled over eight hours until no more caffeine is detected.
