Openness and transparency in our green coffee supply chain is a core principle of our entire roastery's operations.
Sustainable cooperation
Our key intermediary in the coffee supply chain is our Green Coffee Buyer, who works closely with both coffee producers and roasteries. They source coffees suitable for Kirjalan Paahtimo based on our criteria and also set quality standards for the producers.
The Green Coffee Buyer enables direct communication with coffee producers and farmers, thereby building strong and sustainable relationships with the countries of origin and the farms.
Traceability
All coffee we receive is fully traceable back to the farm level. We know where the coffee comes from, who grows it, and the conditions under which it was grown. This includes information on cultivation methods, soil, and the growing environment, for example. Since maintaining coffee quality can be challenging from one year to the next, various factors such as natural disasters, unexpected weather conditions, and climate change can affect the harvest. This may occasionally be reflected in our selection, but it is important to us to maintain ongoing and sustainable partnerships with proven producers.
Processing
Coffee harvesting and sorting are always done by hand, which ensures that its quality is maintained. Bean processing varies, and different methods such as washing and natural processing are used, which significantly affect the final taste of the coffee.
Our roasting process is transparent, with the exception of a few secret recipes that have been developed to achieve optimal flavor. Each new coffee goes through several test roasts so that we can find the best possible roast level and the desired result.
We use a Dutch Giesen roaster for roasting and utilize solar energy in our operations. Finally, the coffees are packaged by hand, where each package is processed, weighed, and labeled individually.
